Crab Cakes
Makes 4 crab cakes
1lb. Jumbo Lump Crab Meat
1 egg
1 ½ tsp. seafood seasoning
½ tsp. Tabasco
1 tsp. Worcester sauce
1 tsp. heavy cream
5 Tbsp. mayonnaise
½ cup bread crumbs
2 Tbsp. chives
Mix all ingredients, except the
crabmeat and breadcrumbs; add
crabmeat; mix very gently; sprinkle
some bread crumbs onto crab
cakes; sautee in very hot oil (both
sides) until golden brown. Serve hot
with Dijon mustard sauce.
