Chão on This
The name of the place is as much fun to pronounce as the food
is delightful to eat. That’s Fogo de Chão (pronounced “fo-go dee
shoun”), meaning “fire in the ground,” a special brand of Brazilian
churrascaria, or steakhouse, that is spreading around the country
like fire itself.
The experience of eating at Fogo de Chão derives from the
custom of the gauchos of Brazil, (cowboys, to us), in which meat,
in decadent variety and quantity, is roasted over an open fire and
brought tableside on skewers and sliced hot right onto your plate.
Fogo was started by two brothers from the Brazilian state of
Rio Grande do Sul, whose most famous native is Gisele Bündchen
(as well-known on fashion’s runway as on the arm of pro football’s
Tom Brady). It began as a family business and remains such, even
as the family extends with the opening of each new restaurant. If
