THE AMENI TIES
the Old-Fashioned. An Old-Fashioned
is made with bourbon, Scotch or rye
whiskey (Mr. Draper prefers rye), a
sugar cube, two dashes of Angostura and a splash of soda water. The
important part is saturating the sugar
cube with bitters before adding anything else.

Original Celery
According to the company that
makes it, the Bitter Truth, this is the
first celery-based bitters to hit the
market in nearly 100 years. The celery, orange and ginger flavors were
designed with classic hair-of-the-dog cocktails in mind, such as the
raw-egg-and-booze Prairie Oyster
or the always reliable Bloody Mary.
Bitter Truth cofounder and mixologist
Stephan Berg’s favorite morning-after
recipe is the celery sour, with gin,
fresh lemon juice, simple syrup and
two to four dashes of celery bitters.
Fee BrOthers Whiskey
Barrel aged
Bottled only once a year, this limited
edition bitters is as close as you’ll
get to the nearly mythical mixture
that supposedly makes the perfect
Manhattan—Abbott’s bitters, which
hasn’t been on store shelves for 60
years and is the Holy Grail of spirits
connoisseurs. There are vintage
bottles of the original barrel-aged bitters floating around, but they’re few
and far between. In the meantime,
see how Fee Brothers revs up a
Manhattan.

XOCOlatl MOle
This small-batch concoction from Bit-termens is designed to open up the
sometimes smoky, sometimes floral
flavors of high-end aged tequila.
With hints of chocolate and spice, it’s
nice in any dark spirit. Try it in a drink
invented by Death and Company’s
Joaquin Simo in New York City’s East
Village, the Latin Quarter, which also
includes absinthe, ice, aged rum and
two other types of bitters—
Angostura and Peychaud’s—to see how
an inventive bitters can turn an old
favorite (the Sazerac) into something
new. —Josh Krist
