of the food business.
“In the kitchen, I just cook what I love,” he says.
“At work as much as at home, it’s a family thing. Like
working at a farm: You eat together, you live together.”
What does Humm eat? Simply put: Whatever he
wants. But that doesn’t mean every day he’s chowing
on the pork dish for which he’s renowned.
“When you’re active, your body craves more healthy
food,” he says. “I love hamburgers, but it’s not what I
crave after a run.”
Moving around a kitchen at top speed for about 12
hours a day—“The energy, the rush of service; I love it”—
is what Humm says keeps him most in shape.
