The Cupcake Wars winner and vegan chef has little to work off,
thanks to her animal fat-free diet and daily exercise routine
Last year, chef Chloe Coscarelli achieved the pre- viously impossible: She won a dessert competi- tion without using a pat of butter. Coscarelli took the Cupcake Wars prize with a vegan chocolate strawberry shortcake cupcake, and her culinary career was made. Veganism is the root of her culinary life in
the kitchen. For Coscarelli, achieving omnivore flavor
without any animal-based products has been her chal-
lenge in the kitchen since she was 17.
“Before I was vegan, food was food. It was nothing
special to me,” she admits. But after she deepened a com-
mitment to keeping animals out of her diet, pushing her
vegetarianism to veganism, she found those limitations
opened creative challenges she found irresistibly exciting.
