As you sink into a tall, circular
banquette, upholstered in custom
fabric from Italy, the ceilings tower
high above, supported by expanses
of etched deco glass panels, pillars
coated in beautiful wood and walls
sheathed in padded fabric, inviting an
exploratory touch. And everywhere are
precious artifacts of carved jade and
porcelain urns. It’s a museum inside
a restaurant.
Then the wait staff
approaches, as polite and
accomplished as one could
find anywhere. Golden cut-
lery is already in place and
soup arrives in golden cru-
cibles fired from below with
small flames to keep the
soup piping hot throughout
the enjoyment.
The menu comprises the
best of China’s main four
tastes—Canton, Beijing,
Shanghai and the regions of
Hunan and Szechwan, rep-
resenting hot and spicy—
prepared by chef Chen-Hua Yang,
who brings more than three decades
of experience to the wok. Chinese
lovers will see some dishes that are
familiar—lemon chicken, sweet and
sour pork, or Peking duck—and many
that are not, such as shark’s fin soup,
Mongolian lamb and firecracker fish,
a specialty simmered in Szechwan
sauce, onions and tomatoes.
Familiar or not, the tastes carry
one to faraway places. Crispy shred-
ded beef, an appetizer, provides the
most astonishingly satisfying con-
trast of crunchy and sweet, dressed
in a soy-onion glaze brightened with
a whisper of vinegar. Dragon and
phoenix soup is a delicate and richly
rewarding blend of crabmeat, minced
chicken and asparagus. And lobster
with ginger and scallion falls from
the shell into a light sherry-soy glaze
that makes the lips smack and crave
a second helping. Whatever the dish,
it matches the splendor of the décor
and the service, which all combine to
provide a most unexpected and plea-
surable Chinese dining experience.
You are not likely to encounter Mr.
K in person at the restaurant, but his
sensibilities are present all around. He
has built a landmark in which every
surface is a delight for the eye, every
morsel a surprise for the tongue, and
every word from the staff is soothing
to the ear.
