Greek egg-lemon soup. Lovers of
Greek food will find the classics done
in Kellari’s special way: Tzatziki
(yogurt-cucumber spread), spana-
kopita, haloumi cheese, calamari,
octopus and many more served on
small plates, or “mezedes,” with a
thought to sharing.
And then move on to another
Greek classic: line-caught, whole,
grilled and de-boned fish. And not
just one special a day but a choice
of sea bream, pompano, red mullet,
red snapper, white snapper, black
sea bass or even lobster.
And there must be lamb, of
course, and at Kellari’s Parea it’s
a unique lamb called “yesterday’s
lamb,” which is not some leftover
from the refrigerator but baby lamb
that has been marinated and slowly
fire-roasted for 24 hours before it
lands succulently on your plate
alongside oregano-lemon potatoes.
Kellari’s Parea takes great pride
n acquiring the finest ingredients
as near—and/or dear—to the
restaurant as possible, whether
it’s balsamic vinegar from Greece or
fresh chicken from Amish country
in Pennsylvania.
“We strive, in the Greek fashion,
o shorten the time and distance any
ingredient spends from the soil, or
the water, or the air, to the plate,”
says chef Gregory Zapantis.
Adventurous wine lovers will find
a large list of Greek wines, often hard
to find in restaurants or retail outl-
ets. Not here. Such white varietals as
assyrtiko, one of Greece’s best whites;
athiri, an ancient favorite; and savan-
tiano, a peachy-citrusy standard. On
the red side, you’ll find two that come
with a lot of buzz and high expecta-
tions for the continued growth of
Greek wine appreciation: agiorgitiko
and xynomavro. And of course many
wines from the United States and other
countries, but when in Greece . . .
